How to measure flour correctly

Why flour measurement technique matters, and how to get consistent results.

Flour is the most common source of recipe inconsistency. The difference between a light, spooned cup and a compact, scooped cup can be 20–30% of the total flour weight. That gap is enough to turn a tender cake into a dense one or a chewy cookie into a dry crumb. The goal is not to obsess over perfection but to reduce surprise. A consistent method gives consistent results.

The most reliable approach is a kitchen scale. Weighing bypasses packing and humidity variables. When a recipe calls for cups, you can still translate to grams with known densities.
